Fresh Strawberry Pie - Driscolls

Ingredients

• 7 Tbsp unsalted butter, room temperature
• 1/4 cup sugar
• 1 1/4 cups all-purpose flour
• 1 large egg yolk
• 3/4 cup sugar, plus 1 tbsp
• 2-3 drops red food colouring (optional)
• 1/2 cup water
• 2 1/2 tbsp cornstarch
• 85g cream cheese
• 2 tbsp glaze (recipe above)
• 450g Driscoll's strawberries
• 1 1/2 cups heavy whipping cream
• 1 tbsp sugar
