Stacked chicken quesadilla

Ingredients

• 2 tbsp coconut oil
• ½ onion, chopped
• ½ green pepper, deseeded and finely chopped
• 1 red chilli, deseeded and finely chopped
• 400 g tinned chopped tomatoes, drained
• 1 tsp cumin
• 1 tsp chilli powder
• 3 x 8 inches whole wheat tortillas
• 150 g cheddar cheese, grated
• 200 g tinned kidney beans, rinsed and drained
• 150 g cooked chicken, shredded
• large handful of Coriander leaves, chopped
