• 20 jumbo pasta shells (cook a couple extra in case some of them don’t make it)
• 1 tablespoon olive oil
• 1 onion
• 3 garlic cloves
• 1/2 tsp. crushed red pepper
• 150g fresh baby spinach
• 1 1/2 cups ricotta
• 1 1/2 cups grated mozzarella
• 1 large egg
• 1/4 tsp. salt
• 1/4 tsp. freshly ground pepper
• 1 jar (19.4oz) Nonna Pia’s Arrabiata Sauce
