• 1/2 tsp grapefruit zest

• 3 eggs whites
• 1/4 tsp cream of tartar
• For the grapefruit cream cheese frosting
• 340g cream cheese
• 2 tbsp grapefruit juice
• 1 tsp grapefruit zest
• 105g icing sugar, sifted
• 6 to 8 drops yellow food colouring
• 450g tin grapefruit sections, well drained
