• 2 cups sugar
• 2 cups selfraising flour
• 2 teaspoons bicarbonate of soda
• 2 eggs
• 1 teaspoon vanilla essence
• 2 cups crushed pineapple, juice and all
• 2 cups grated carrots
• 80 g crushed pecans
• 3 teaspoons cinnamon
• 3 teaspoons mixed spice
• Icing:
• 150 g butter
• 2 cups icing sugar, more if necessary
• 1 tub cottage cheese (creamed plain smooth full fat)
