PIMIENTO CHEESE #2 - Community Kitchen
Pimiento Cheese is a uniquely southern delectable dip. My version is made with two types of cheddar + zesty Dijon mustard + tangy Worcestershire sauce.
Ingredients
- 8 oz sharp white cheddar, finely grated (I used Tillamook)
- 4 oz extra sharp cheddar, grated (I used Tillamook)
- 1 C mayonnaise (I used Duke's)
- 4 oz jar pimientos, diced
- 1 t Dijon mustard
- 1 t Worcestershire sauce
- 1/2 jalapeño, seeded + diced
- 1 bunch fresh chives, diced (2 T reserved for sprinkling)
- freshly ground pepper, to taste
