Ingredients

• 10 oz Wide noodle pasta
• Salt for water ( 8g per quart)
• 3 or 4 slices prosciutto
• 3 Tbsp Butter
• 3 Tbsp Olive oil
• 1 lbs. mixed Mushrooms (morel, white button, etc.)
• 1 Shallot
• 2 cloves Garlic
• 1 tsp Thyme leaves
• 1/4 cup White wine
• 1/2 cup Mushroom, Beef or chicken stock
• Parsley
• 1 Handful cherry tomatoes cut up
• 1/4 cup Cream, creme fraise, or half and half
• Salt and pepper to taste
• 2 Tbsp Pecorino (optional)
