Greek Inspired Lasagne

Ingredients

• 2 tbsp olive oil
• 4 chicken breasts
• 1 onion, diced
• 1 garlic clove, crushed or grated
• 1 tbsp tomato purée
• 1 tsp cinnamon
• 1 tsp ground black pepper
• 1 tbsp oregano, fresh or dried
• 1 chicken stock cube
• 400g chopped tomatoes
• 1 bay leaf
• 125g mozzarella, drained and roughly torn
• parmesan, to taste
• 5 fresh lasagne sheets
• 100g feta, crumbled
• handful fresh herbs (dill, parsley, mint)
