• 1 cup (250 mL) stuffed manzilla green olives
• 1 small Spanish or red onion, chopped, about 1 1/2 cups
• 2 large garlic cloves, finely chopped
• 2 tsp (10 mL) dried thyme
• 1 tsp (5 mL) each cumin and paprika
• 1/4 cup (60 mL) sherry (optional)
• 1 tbsp (15 mL) cornstarch (optional)
