Luxury Fish Pie – Paderno

Ingredients

• 1.35 kg yellow potatoes (about 7 medium potatoes)
• 1 teaspoon salt
• 1 ⅓ cups milk
• 3 tablespoons butter
• 2 leeks (white and light green part only), thinly sliced in half-moons
• 2 tablespoons all-purpose flour
• ¾ cup milk
• ½ cup whipping (35%) cream
• ½ teaspoon salt
• 1 ½ cups fresh or frozen peas
• ½ cup chopped fresh parsley
• Zest of 1 lemon
• 225 g skinless salmon fillet, cubed
• 150 g small shelled shrimp
• 150 g hot-smoked trout or salmon, flaked
• 1 cup grated Cheddar cheese
