Roasted Turkey Tacos with Pepsi MAX

Ingredients

• 2 turkey thighs
• 3 tbsp chipotle paste
• 2 tbsp soy sauce
• 2 limes, juice
• 1 orange, juice
• Drizzle olive oil
• 2 tsp smoked paprika
• 1 tsp ground cumin
• 1 tbsp maple syrup
• 1/4 cabbage, shredded
• 100g brussels sprouts, shredded
• 2 tbsp vegan mayo
• 1 lime, juice
• Salt, to taste
• Corn tortillas, toasted
• Avocado, sliced
• Radishes, sliced and lightly pickled
• 100ml Maple syrup
• Big pinch chilli flakes
