Spinach and Potato Stew Recipe | Guiso de Patatas con Espinacas
This potato and spinach recipe creates a simple dish which is a typical starter on 'menús del día' in the little, family run restaurants around Madrid.

- 3 medium potatoes peeled and chopped into bite sized pieces
- 1 medium onion chopped
- 2 cloves of garlic
- 5 tablespoons of breadcrumbs
- a little saffron or alternatively 1 teaspoon of yellow food colouring
- 4 tablespoons of olive oil
