Rice Pudding - Rick Bayless

Ingredients

• 2 inches cinnamon stick, preferably Mexican canela
• A 2-inch strip of lime zest (about 3/4 inch wide)
• 1 cup rice (medium grain rice gives the best texture)
• 4 cups milk
• 2/3 cup sugar
• 3/4 teaspoon salt
• 1 teaspoon vanilla extract
• 1/4 cup raisins
• A little ground cinnamon, for garnish
