Ingredients
- 1 1/2 lbs sweet potatoes, unpeeled, cut into bite-size chunks
- 2 tablespoons unsalted butter, room temperature, DIVIDED
- 8 scallions (green & white parts)
- 2 large eggs, beaten
- 1 cup whole wheat bread crumbs
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 teaspoon orange zest
- 3 tablespoons fresh parsley, chopped
- 2 tablespoons whole wheat bread crumbs (Yes, again!)
