• 4 russet potatoes, baked until tender
• 6 strips bacon
• 1 1/2 tablespoons oil or butter
• 1 small yellow onion, diced
• 2 garlic cloves, minced
• 1/4 cup flour
• 3 cups chicken broth
• 1 teaspoon dried thyme
• 1 teaspoon dried basil
• 1/4 teaspoon smoked paprika
• 4 green onions, diced
• 2 ounces hot pepper cheese, shredded
• 2 ounces cheddar cheese, shredded
• 1 cup milk
• Salt and pepper to taste
