Ingredients: 2 tbsp olive oil; 1/2 onion, thinly sliced; 2 large chunks of Lion’s Mane Mushroom, shredded (other mushrooms will great here too!); 1 pepper of choice (mild or hot), thinly sliced; 2-3 garlic cloves, peeled and minced; 1 tsp chili powder (you can also use your favorite taco seasoning instead of the next three spices); 1 tsp cumin; ½ tsp coriander powder; ½ tsp dried oregano; salt and pepper to taste
