We wanted our quesadillas to highlight what's really important: perfectly browned tortillas and luscious cheese.
Ingredients
- 2 plain flour tortillas, eight-inch
- 2/3 cup queso fresco, crumbled
- 1/2 teaspoon minced fresh cilantro leaves
- 1 tablespoon minced pickled jalapeños (optional)
- 2 tablespoons chopped roasted red pepper, patted dry to remove excess moisture
- vegetable oil for brushing tortillas
