• 1 cup onion, diced
• 1 cup carrots, peeled and chopped (about 3 carrots)
• 3 celery stalks, diced
• 1 tablespoon garlic, minced
• 1.5 lbs boneless chicken breast *see recipe notes if using leftover chicken
• 1 tablespoons fresh thyme (or 1 teaspoon dried)
• 1 tablespoon fresh rosemary (or 1 teaspoons dried)
• 1 bay leaf
• 1 teaspoon kosher salt
• 1 teaspoon black pepper
• 6 cups chicken stock
• ⅓ cup flour
• 2 cups half and half or milk
• 4 ounces cream cheese, softened and cut into small cubes
• 1 cup frozen peas
• 1 cup small pasta (like ditalini)
• 1 tablespoon lemon juice (about half a lemon)
• 3 cups spinach (or kale/escarole)
