Coconut Cookies; 5-6 tablespoons coconut oil or butter, melted; 4 large egg yolks; ¼ cup cornstarch or arrowroot powder; 1 can full fat coconut milk, reserve 2 tablespoons fat for whipped cream topping; 1 cup half and half; 2/3 cup sugar; ¼ teaspoon salt; 1 cup unsweetened shredded coconut, toasted; 2 tablespoons butter; 1 teaspoon vanilla; Optional: ½ teaspoon coconut extract; 1 ½ cups heavy whipping cream; Reserved 2 tablespoons coconut fat from above; 3 tablespoons powdered sugar; Additional toasted coconut, about ½ cup
