Strawberry Season Pie - Grit

Ingredients

• 1-1/4 Cups all-purpose flour
• 1/4 teaspoon salt
• 1/2 teaspoon granulated sugar
• 1/4 Cup ice water
• 1/2 Cup (1 stick) butter, chilled and cubed
• 3/4 Cups strawberry jam, no sugar added
• 2 Tablespoons water
• Zest and juice of 1 lemon
• 1 envelope of unflavored gelatin
• 2 lbs. of strawberries, or 1-2 cups more if desired
• 1 can coconut cream
• 2 Tablespoons honey
• 1/4 teaspoon pure vanilla extract
• 1 egg yolk
• 1 tablespoon water
