- 1 Yellow Onion, chopped
- 2 TB chopped Garlic
- 1 bunch Green Onions, chopped
- 4 1/2 oz can chopped Green Chilies
- 1 can Cream of Celery Soup
- 1 can Enchilada Sauce
- 1 can Refried Beans w/ green chilies
- 8 12" Flour Tortillas or 20 - Corn Tortillas
- 3 cups shredded Pepper Jack Cheese
- Garnish: Sour Cream and Salsa
