Ingredients

• 2 lbs (900g) Beef chuck roast, cut into 1-inch cubes
• 2 tbsp (30ml) Olive oil
• 1 tsp (5g) Salt
• 1/2 tsp (2.5g) Black pepper
• 2 tbsp (15g) All-purpose flour
• 1 large Yellow onion, chopped
• 2 large Carrots, peeled and chopped
• 2 Celery stalks, chopped
• 3 cloves Garlic, minced
• 4 cups (950ml) Beef broth (low sodium is best)
• 1 cup (240ml) Dry red wine (Cabernet Sauvignon or Merlot work well)
• 1 tbsp (7g) Tomato paste
• 1 tbsp (6g) Worcestershire sauce
• 1 tsp (2g) Dried thyme
• 1/2 tsp (1g) Dried rosemary
• 1 lb (450g) Yukon Gold potatoes, peeled and cubed
• 1 cup (150g) Frozen peas (added in the last 30 minutes)
• Fresh parsley, chopped (optional garnish)
