• 2 smoked sausage (polish or other)
• 1 1/2 T butter
• 1 1/2 T Olive Oil
• 1 onion
• 1 leek
• 1 stalk celery
• 2 medium carrots
• 3 T flour
• 3 medium potatoes
• 1/2 t salt
• 1/4 t thyme
• 1/4 t pepper
• 4 c chicken stock
• 1 c medium to sharp cheddar cheese or other flavorful strong cheese (optional)
