• 1 pack of Impossible Meat (340g)
• 3 tbsp oil
• 2 large onions (finely diced)
• 2 cloves garlic (minced)
• 2 large russet potatoes (cut into a 1/2-inch dice)
• 2 tsp curry powder
• 1 1/2 tsp turmeric
• 1/2 tsp cumin
• 2 cups vegetable broth (350ml)
• 1 tbsp cornstarch
• 1 cup mixed vegetables or peas (optional)
• 1/4 tsp sugar
• 1 tsp salt
• Black pepper to season
