• 1 tsp garlic powder
• Sea-salt flakes and freshly ground black pepper to season
• 1 free-range egg
• 1/3 cup plain flour
• 2 large chicken breast fillets, halved horizontally
• Olive oil spray
• 8 slices streaky bacon
• 3 Little Gem lettuce, torn into cups
• 4 dill pickles, finely chopped
• 2 eschalot, thinly sliced
• 2 Tbsp roughly chopped dill, to serve
• Dressing
• 1/3 cup buttermilk
• 2 Tbsp extra virgin olive oil
• 1 tsp smoked paprika
• 1 Tbsp maple syrup
• 1 Tbsp Dijon mustard
• 1/2 tsp Tabasco sauce (or to taste)
• Juice and finely grated zest of 1 lime
