Bacon-Wrapped Chicken Drumsticks - Ted Reader

Ingredients

• 1/4 cup (60 mL) Garlic and Herb Rub (see recipe below)
• 1 chipotle pepper in adobo sauce, minced
• 1 Scotch bonnet chile, seeded and minced
• 1 tsp (5 mL) sambal oelek (or other Asian chile sauce)
• 12 chicken drumsticks, scored right through skin into meat in 3 or 4 places
• 12 slices bacon
• 4 cloves garlic, minced
• 1/2 cup (125 mL) firmly packed brown sugar
• 1/4 cup (60 mL) corn syrup
• 2 tbsp (30 mL) white wine vinegar
• 1 tbsp (15 mL) fresh herbs, chopped (parsley, sage, rosemary, etc)
• 1/4 cup (60 mL) Dijon mustard
• Salt and freshly ground black pepper
