Ingredients

• 1 Large eggplant, cut in half lengthways
• 2 tomatoes, quartered
• 1 onion, quartered
• 4 garlic cloves
• 2 tbsp olive oil
• 1 tsp oregano
• 1 tsp dried basil
• 1 tsp thyme, dried
• ½ tsp chilli flakes
• salt and black pepper to taste
• 4 cups Vegetable or chicken stock
• 2 cups Puck® Four Cheese Sauce
• fresh basil leaves
• chilli flakes
• olive oil
