Ingredients

  • 800g of firm tofu, drained
  • 80g of shio koji (or 1 tsp of sea salt)
  • 50g of katakuriko (potato starch) or cornflour
  • 2 tbsp of vegetable oil
  • 2 tbsp of toasted sesame oil
  • 2 tbsp of flaked almonds
  • 2 garlic cloves, thinly sliced
  • 20g of fresh ginger, peeled and finely chopped
  • 2 spring onions, thinly sliced
  • 3 tbsp of soy sauce
  • 2 tbsp of mirin
  • 2 tbsp of toasted white sesame seeds
  • 1 tbsp of dried goji berries
  • Pinch of sea salt
  • 2 red radishes, cut into matchsticks, to serve
  • Mixed leaf salad, to serve
