Crispy Popcorn Chicken - Spanish Passion Foods & Wines

Ingredients

• 4x Boneless skinless Chicken Thighs (Each cut into 3)
• 100ml x Buttermilk
• 1 x Generous pinch of Sweet Paprika
• 1 x Generous pinch of Turmeric
• 1 x Tea spoon Garlic Granules
• Place all ingredients into a bowl mix well and marinade overnight
• 100g x Panko Breadcrumbs
• 50g x Polenta
• 1/2 Teaspoon Sweet Smoked Paprika
• 1 x Teaspoon Garlic Granules
• Salt and Pepper
• Mix well and place in a tray
• 2x Greek Style Flatbreads
• 2x Large Round Vine Tomatoes (1/4 and remove seeds)
• 2x Clove Garlic smash and finely chop
• 1x Red Onion very finely chopped
• 10g x Coriander finely Chopped
• 1/2 x Red Chilli Finely Diced
• 150ml x Tomato Ketchup
• Salt & pepper to taste
• 150ml x Thick Yoghurt
• 5g x Mint fine Julienne
• 5g x Coriander finely chopped
• Juice of 1/2 a Lime
• Place ingredients into a bowl and mix well
