• 2 x (400 g) cans diced tomatoes with herbs

• 1 large bunch Italian parsley
• 200 g shredded mozzarella cheese
• 1 large lemon
• 200 g mixed salad greens
• 1 tsp dried oregano
• 1 tsp dried basil
• 2 tbsp balsamic vinegar
• 3 tbsp extra virgin olive oil
