• ⅓ cup dark beer (such as Guinness Extra Stout)
• ¼ cup yellow mustard seeds
• 2 Tbsp. brown or black mustard seeds
• 1 tsp. kosher salt
• ¼ tsp. ground turmeric
• ⅛ tsp. each ground allspice and ginger
• 2 -4 Tbsp. warm water
• 2 cups seeded and shredded cucumber (about 1 large)
• ½ cup seeded and shredded red bell pepper (about ½ a large pepper)
• 1 ½ tsp. kosher salt, divided
• ½ cup cider vinegar
• 3 Tbsp. sugar
• 8 hot dogs, grilled
• 8 hot dog buns, toasted
