• 1 cup rice & quinoa blend rinsed
• 5 cups cold water
• 1 tbs olive oil
• 2 garlic cloves thinly sliced
• 1/2 bunch kale leaves shredded
• 600g cooked prawns peeled, deveined
• 125g feta crumbled
• 1/2 cup pine nuts toasted
• 1/2 cup flat-leaf parsley chopped
• 3 tbs extra virgin olive oil
• 1 lemon rind finely grated, juiced
• 1/2 tsp caster sugar
• 1 tsp dijon mustard
