• 2 tsp olive oil
• 1 onion, finely diced
• 1 clove garlic, finely chopped
• 1 tsp ground cumin
• 1 tsp cinnamon
• 1/4 tsp chilli powder
• 500g lean beef mince
• 2 tbsp tomato puree
• 12 crunchy taco shells
• 100g canned sweetcorn, drained
• 1 large tomato, diced
• 50g cheddar, cubed or diced
• Small handful of fresh coriander, roughly chopped
• Guacamole, salsa, sour cream or plain yoghurt (optional)
