Ingredients

• 2 x 275g Scamorza Bianca Cheese, diced into cubes
• 12 slices of bread (sourdough or ciabatta), cubed
• 4 large eggs
• 1 ½ cups milk
• 1 cup heavy cream
• 150g diced bacon rashers
• 1 medium white onion, finely chopped
• 1 tbsp olive oil
• 1 cup fresh basil leaves, roughly chopped
• Salt and pepper to season
