Ingredients

• 1 large ear corn, husk removed
• 1 1/4 sticks butter, chopped into pieces
• 2 large peaches, peeled, pit removed, and halved
• 2 medium tomatoes, halved lengthwise, seeds removed
• 1/2 small sweet onion, peeled
• 1 tablespoon vegetable oil
• 2 teaspoons apple cider vinegar
• 1 teaspoon honey
• Pinch fresh thyme leaves, chopped
• 12 slices hickory-smoked bacon
• 1 2/3 pounds grass-fed ground chuck
• 1/3 pound summer sausage (or any smoked sausage), chopped and ground in the food processor
• 1 1/2 teaspoons salt
• 1/4 teaspoon freshly ground black pepper
