• 4 cups Kosher salt
• 4 cups Brown sugar
• 3 Bay leaves
• 1/2 cup Black peppercorns, crushed
• 1/2 tsp White peppercorns, ground
• Whole cloves for the score marks
• 1/8 tsp Nutmeg
• 1/8 tsp Ground cinnamon
• 1/8 tsp Ground ginger
• 1 tbsp Curry powder
• 1/2 cup Honey
• 1/2 cup Red wine
