• ½ c granulated sugar
• 2 tbsp unsweetened Dutch-processed cocoa powder
• 2 tbsp plus 1 teaspoon cornstarch
• 1 tsp kosher salt
• 2 eggs, at room temperature
• 1 ½ c heavy cream
• 1 ½ c whole milk
• ½ vanilla bean, split lengthwise and seeds scraped out
• ¼ c unsalted butter, at room temperature
• 4 oz dark chocolate (preferably Valrhona 70% cacao), chopped
