Ingredients

• 2 large - sweet potatoes
• 2 T - olive oil
• 1 - onion, halved and thinly sliced
• 1 tsp. - kosher salt
• 1 tsp. - freshly ground pepper
• 1 T - balsamic vinegar
• 1 1/2 T - honey
• 4 - slices bacon, cooked crisp and cut into 1/2" pieces
• 1/2 cup - shredded Gruyere
• 3 T - toasted walnuts, roughly chopped
