  • 2 cups of soft pitted dates.
  • Pinch of salt.
  • 3 tablespoons of almond or peanut butter (Choose the brand without oil and sugar added).
  • 1 teaspoon of vanilla extract.
  • 1 cup of oat flour (or alternative- see final notes).
  • Half of the caramel that you have already prepared.
  • Block of vegan chocolate.
  • 1/2 cup of peanuts.
  • Soak the dates for 10 minutes in hot water.
  • Ensure the dates are properly drained by using a colander or gently squeeze out any excess water with your hands.
  • Blend the dates in your food processor or blender until smooth.
  • Add your nut butter of choice, vanilla extract, and a pinch of salt. Blend until well combined.
  • Set aside half of the mixture and leave the remaining half in the blender.
  • Add oat flour or an alternative to the blender where you reserved half of the previously prepared caramel.
  • Combine oat flour and caramel in a food processor until it reaches a slightly wet dough consistency.
  • Melt the chocolate over a pot with boiling water until it reaches a smooth, runny consistency.
  • Chop the nuts.
  • Arrange the layers in the shallow square dish or brownie tin as follows: base, caramel, nuts, and melted chocolate.
  • Let it set in the fridge or freezer for 10-15 minutes, then cut into your desired shapes and devour like a true dessert enthusiast!
  • You have the option to swap oat flour for almond meal.
  • If you don't have oat flour, you can simply blend 1 cup of oats in a food processor or blender until they reach a fine, coarse texture.
  • To create a gluten-free version of these bars, you can use gluten-free oats.
  • Feel free to use any nuts of your preference.
  • You can store it in the freezer for up to one month. I suggest cutting it into individual bars portions before freezing for easier division.
