- 3 egg yolks
- Ground cinnamon, for garnish
- ¾ cup (100 g) brown sugar
- 2 tablespoons (30 g) unsalted butter
- ¼ teaspoon kosher salt
- 1 cinnamon stick
- 4 cups (1 liter) whole milk
- 1 cup (200 g) short-grain white rice
