Chicken Quesadillas with Pico de Gallo | Dairy Council, Northern Ireland

Ingredients

• 2 large tortillas
• 2 skinless and boneless chicken breasts cut into strips
• 120g NI Cheddar Cheese (add more if you would like)
• 1 green pepper, seeded and sliced
• 1 red pepper, seeded and sliced
• 1 small onion finely sliced
• ½ tsp cumin
• ½ tsp oregano
• ½ tsp smoked paprika
• Salt and pepper
• 1 tbsp olive oil
• 3 large tomatoes, diced to 1cm
• 1 shallot, finely diced.
• 2 tbsp lime juice
• 3 tbsp fresh coriander, finely chopped
• Salt to taste
