Sams Famous Carrot and Pecans Cake

Ingredients

• 2 cups all-purpose flour

• 1 1/2 cups granulated sugar
• 1 cup vegetable oil
• 4 large eggs, room temp
• 2 cups finely grated carrots
• 1 cup crushed pineapple (drained)
• 1 cup chopped pecans (plus more for topping)
• 1 cup shredded coconut (optional)
• 1 tsp vanilla extract
• 1 cup (2 sticks) unsalted butter (softened)
• 16 oz cream cheese (softened)
• 6 cups powdered sugar
• 2 tsp vanilla extract
• Pinch of salt
• Extra whole pecans (for decoration)
• Crushed cake crumbs and chopped pecans (for decoration)
