Sausage and Rice Casserole - Salamanca Fresh

Ingredients

• 2 tbsp olive oil
• 350g Ziggys Italian Sausages, cooked and sliced into 1cm thick pieces
• 1 red capsicum, diced
• 1 yellow capsicum, diced
• 1 small onion, diced
• 1 tsp dried basil
• 1/2 tsp sea salt
• 1/4 tsp black pepper
• 1 cup instant brown rice
• 2 cloves garlic, minced
• Pinch chili flakes
• 1 cup chicken stock
• 400g can Fiamma diced tomatoes
• Fresh parsley, chopped, to serve
