• 3⁄4 cup olive oil

• 8 tbsp. unsalted butter
• 1 medium yellow onion, thinly sliced
• 1⁄2 cup chicken stock
• 1⁄2 cup grated pecorino romano
• 2 tbsp. dark brown sugar
• 2 tbsp. fresh lemon juice
• 2 tbsp. roughly chopped thyme
• 1 (28-oz.) can whole peeled tomatoes in purée, crushed by hand
• 1 (16-oz.) can tomato purée
