• 1 medium onion, finely chopped
• 1/4 cup all-purpose flour
• 3/4 teaspoon salt
• 1/4 teaspoon pepper
• 2 large eggs, lightly beaten
• 2 pounds medium sweet potatoes, peeled and shredded
• 1/2 cup peanut or canola oil
