• 70g plain flour
• 1 tbsp cornflour
• 1 garlic clove, peeled and crushed
• ½ tsp sugar
• Pinch of sea salt
• 1½ tbsp soy sauce
• 2 tsp rice-wine vinegar
• Vegetable oil, for frying
• 2 tsp chives, very finely chopped
