• 2 Tbsp. olive oil
• salt and pepper
• 5 strips center cut bacon
• 1 medium onion, diced
• 2 cloves garlic, minced
• 1 tsp. fresh thyme, chopped
• 3 cups chicken (or vegetable) broth
• 1 cup aged, sharp white cheddar cheese, shredded
• 1 cup milk or cream
• salt and pepper to taste
