Ingredients

• 8 kg honey
• 2 gallons Earl Grey tea (brewed with 100 teabags)
• 4 apples, cored & sliced
• 1 kg dried mixed fruit (sultanas, raisins, cranberries, candied citrus peel)
• 3 oranges, roughly chopped (peel included)
• 2 tablespoons ground cinnamon
• ½ tablespoon allspice
• ½ tablespoon nutmeg
• 1 teaspoon ginger
• 1 tablespoon cloves
• ½ tablespoon black peppercorns
