Ingredients

  • 2 Tbsp. unsalted butter
  • 2 lb. large shrimp, peeled and deveined, shells reserved
  • 1 rib celery, chopped
  • ½ large onion, chopped
  • 2 fresh bay leaves
  • 4 cups seafood stock or low-sodium chicken broth
  • 4 tsp. each paprika and granulated garlic
  • 2 tsp. each dried thyme and oregano
  • 1 tsp. black pepper
  • ½ tsp. each white pepper and cayenne pepper
  • 1 stick unsalted butter (8 Tbsp.)
  • ½ cup all-purpose flour
  • 1 ½ large onions, diced (3 cups)
  • 2 ribs celery, diced (1 cup)
  • 1 green bell pepper, diced (1 cup)
  • 1 Tbsp. minced fresh garlic
  • 1 can diced tomatoes in juice (14.5 oz.)
  • ¼ cup each chopped fresh parsley and sliced scallions
  • Salt to taste
