Very easy to create and sumptuous to eat. The rabbit works beautifully against the sharp peppy piccalilli.

- 1/4 cup parsley, finely chopped
- 1/4 cup tarragon, finely chopped
- 2 cloves garlic, finely chopped
- 1/2 lemon, zested
- 2 rabbot legs
- 8 slices streaky bacon
- 6 Tbsp peppy piccalilli
